1 c. chopped zucchini
1/4 c. chopped onion
1/4 c. grated carrots
1/3 c. cream of chicken soup
1/3 c. cheddar cheese
1/3 c. sour cream
1 box chicken stuffing
Boil veggies for 10 minutes until tender but still firm. Use veggie water to make stuffing by package directions. Combine cheese, sour cream, and chicken soup. Stir veggies into sauce and spread in the bottom of a small casserole dish. Top with stuffing and bake at 350* for 15 - 20 minutes.

Stuffed Ham Rolls
1 box chicken stuffing mix
2 Tbsp. butter
1 pkg. cream cheese, 4 oz.
4 slices ham
Make stuffing by package directions. Spread cream cheese on ham slices, spread 1/4 of stuffing down center of each ham slice. Roll ham and secure with toothpicks. Bake at 350* for 15 - 20 minutes

Chicken Alfredo
1 c. cooked pasta
1 chicken breast, grilled
2 Tbsp. butter
2 Tbsp. flour
1 c. milk
1/4 tsp. garlic powder
2 Tbsp. parmesan cheese
salt and pepper to taste
Melt butter, stir in flour to make a paste. Add milk, stir continually over medium heat until thick and bubbly. Add remaining ingredients.

Shelly's Pumpkin Cookies
1 box spice cake mix
3/4 c. brown sugar
1 can pumpkin 29 oz., not pie filling
2 eggs
2 1/2 c. flour
1 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ground cloves
2 tsp. baking powder
chocolate chips
Combine all ingredients, scoop out on lightly greased baking sheet. Bake at 350* for 18 - 20 minutes.

Mexican Rice With Milk
I got this recipe when I worked for Mike and Kenny. The cook would make this occasionally and it would be gone by the end of the night. So YUMMY!!!! This can be served plain, with cool whip or over vanilla ice cream.
1 c. rice, NOT instant or quick cook
3 c. water
1 c. sugar
1 tsp. cinnamon
1 tsp. vanilla
3 c. milk
In large sauce pan combine all ingredients except milk. Bring to a boil on medium heat. Boil continuously until rice is tender, about an hour. After rice is tender add milk and boil again for 5 minutes.

1 1/2 tsp. garlic powder
2 cans pinto or great northern beans
1/2 c. chicken broth
2 cans green chilies
1 tsp. salt
1 tsp. cumin
1 tsp. oregano
1/2 tsp. pepper
1 tsp. chili powder
1 c. sour cream
1/2 c. heavy cream
crisp bacon, crumbled
In large pot combine cooked chicken, and onion. Sautee until onions are tender. Add beans, broth, chilies, and seasonings, bring to a boil. Reduce heat to simmer, cover and cook for 30 minutes stirring occasionally. Remove from heat, add sour cream and heavy cream. Serve with crumbled bacon on top.
