Ranch Potatoes

7 medium potatoes cut into small cubes
1 c. sour cream
1 envelope ranch dressing mix
2 Tbsp. milk
1 c. shredded cheese

Place potatoes in large pot and cover with water. Cook on high just until boiling, drain water from potatoes then transfer to a lightly greased 9 x 13 baking dish. Lightly spray cooking spray on top of potatoes. Combine sour cream, ranch dressing mix, and milk and pour on top of potatoes, top with shredded cheese. Bake at 325* for 25 - 30 minutes.
